A Special Visit to Malta, with ION Harbour
At the end of October Simon travelled to Malta with Oil Marlow, Executive chef of Aulis, Roganic and The Baker and the Bottleman, to join Seumas Godhavn Smith and Alex Dilling for a āFour Hands Dinner' at ION Harbour by Alex Dilling.
ION Harbour is run by multi-award-winning Michelin starred chef Alex Dilling and is situated on the stunning rooftop of Iniala Harbour House in Valletta. Simon and Oli took to the kitchen for the two-night event which showcased a bespoke, collaborative eight-course menu to guests.
During their stay, Simon, Oli and the team were lucky enough to sit down and enjoy meals at both at ION Harbour, and Tartarun, a seafood restaurant on the harbour of Marsaxlokk, to enjoy fantastic food and service in two very beautiful settings.
