He, alongside ION Harbour head chef Eoin Smith and executive chef Oli Marlow, have worked tirelessly to identify the very best and most aligned suppliers, working with experts and insiders to discover small-scale, sustainable producers including spear fishermen, and a third generation salt farmer in Gozo. Together, they work with a specialist forager who assists with the identification of specialty and native breeds.

The Baker & The Bottleman
Hong KongThe Baker & The Bottleman
Sustainable modern bakery by day, natural wine bar by night.
âWe are advocating traditional baking techniques that have been around for hundreds of years, as well as low-intervention wine-making. We aim to serve natural ingredients within a fun and modern space that caters perfectly to the metropolitan lifestyle â for the forward-thinkers who are ready to set an example and make a change.â says Chef Simon Rogan
True to our ethos, sustainability is at the very heart of the concept - our bakers and chefs produce all the food from scratch in-house, observe the seasons and work with only the best local suppliers. We use traditional artisanal techniques and flavours giving a strong British heritage to each baked item.
In the evening, our upstairs space transforms into a casual wine bar serving natural wines alongside snacks, cold cuts and cheese. An ideal setting to raise a glass of good wine, whilst enjoying a snack and sharing plates with family, friends or work colleagues.
