Fell X Simon Rogan Our Farm Woodruff Stout
We are excited to share with you our latest collaborative project, âWoodruff Stoutâ, our âfarm to glassâ beer made with the brilliant team at Fell Brewery.
Fell Brewery is located just ten minutes down the road from Our Farm in Cartmel. Last year, Fell released a series of beers that relied on using only local ingredients such as crimped barley, oats and even using local whey in their milk stout. This approach to brewing using local ingredients caught our attention, and we approached founders Tim and Andrew to talk about producing a beer that used ingredients grown on Our Farm.
The team at Fell have used foraged ingredients before, but not woodruff and so the brew team were keen to get their teeth into experimenting with it.
The beer has been specifically designed to complement and support the addition of woodruff, using oats grown at the nearby Holker Estate.
The Woodruff was sourced from Our Farm as well as foraged from woods in the area by Liam, head chef at Our Farm, and the Fell team.
Eleven members of the restaurant and farm team joined the Fell team on âbrew dayâ. Led by Imogen and John from Fell, the woodruff was added to the brew in place of standard hops. The result is a traditional dark stout, which beautifully pairs the woodruff with a base of speciality malts. An aromatic nose of forest floor and cinnamon leads to flavours of sweet gingerbread, chocolate and tobacco, a suggestion of festive lebkuchen and a dry, leathery finish.
