Our Commitment to Zero Waste

Sustainability has always been at the core of what we do, and weā€™ve focused on seasonal, regenerative farming since we opened L'Enclume 20 years ago.

Our Farm is now in its 11th year and supplies nearly 80% of the ingredients used in our restaurants in The Lakes. That doesnā€™t mean we are done, more the contrary. It's about the next 20 years, about promoting change within the industry and doubling our efforts to be completely zero waste. And with the foundation of our Academy by Simon Rogan, we intend to teach the future generation of restaurateurs and chefs to respect and cherish this connection with nature.

We must play our part in helping preserve our precious resources and reduce waste in all its forms. To put it all in context - if every business in the hospitality sector worked together collectively, weā€™d make a huge difference in helping reduce the staggering 1.1 million tonnes of food waste that ends up in landfill. So we want to encourage everyone to do what they can, small and large, for the future of our planet.

We're doing more than ever, and now have nine Ridan composters at Our Farm, which can compost all food waste from our Cartmel restaurants, our Home by Simon Rogan operation, and most of the waste from Henrock just down the road in Bowness-on-Windermere. Find out more in this article by The Times.
