Welcome Mark, our new Head Chef at Henrock
Mark McCabe, former chef/owner of Green Michelin-starred The Ethicurean, will take over from Cillian Hennessy as head chef at Henrock, whilst Cillian will be promoted to Aulis Cartmel development chef.
The menu at Henrock is rooted in locally sourced ingredients, highlighting produce grown at Our Farm and from like-minded farmers, suppliers and fishermen, but also nods to Simon's travels worldwide. As an extension of this ethos, Mark will work with Our Farm manager and head chef, John and Liam, to grow and preserve a selection of tropical plants and exotic species that the team have discovered.
In the centre of Cartmel, Cillian will be in charge of researching and refining new dishes for Aulis Cartmel, our chef's table and development kitchen in The Lakes. He will be putting his degree in Food Science to use, working on new techniques and experiments that bring Simon's culinary vision to life.
