It’s the Year of the Cabbage, and Simon is spotlighting the humble ingredient with a new dish for you to enjoy at home. His new stuffed cabbage, recently cooked at The Big Feastival, will be joining our menus this November. Filled with sausage meat, pickled chanterelles, pickled baby onions and this season’s ramson capers, it’s served with creamy mash potato and a rich bordelaise sauce finished with truffle juice. Young shoots and flowers from Our Farm provide the finishing touch. The dish will be available in two sizes - a smaller size for 1-2 people and a larger size for 2-4 people, with the option to add a mini truffle to grate over the top at home. |
